Grilled Branzino

Ingredients:

whole branzino; or any 1 lb fish

lemon

fresh rosemary

olive oil

salt and pepper

Serve with: wasabi sauce (recipe here) or

pineapple pico (recipe here)

Instructions:

  1. Make sure fish is fresh, clean, de-finned and dry.

  2. Place lemon slices and rosemary stalks into the cavity.

  3. Oil outside liberally and season well.

  4. Oil grill and cook fish on high heat for 7 to 8 minutes on each side. Turning carefully.

  5. Meat should release from the bone easily but you will also need to check for pin-bones.

  6. Serve with wasabi sauce or pineapple pico.
