Pineapple Pico

Ingredients:

fresh pineapple (or mango, strawberries...)

orange bell pepper

jalepenos

red onion

grape tomatoes

cilantro

good olive oil

lime juice

Instructions:

  1. Chop all fruit and veggies into equal size pieces. 

  2. Toss together with cilantro and a drizzle of olive oil and lime juice. 

  3. Chill for at least an hour to meld flavors. Best served at room temp.
