Mr T's Sage Gimlet

Ingredients:

1.5 oz gin

.75 oz sage infused simple syrup

.75 oz fresh lemon juice

1 egg white

sage for garnish

Instructions:

  1. Make simple syrup with 2 oz water, 2 oz sugar and 3 fresh sage leaves. Bring to boil and cool completely. 

  2. Dry shake (no ice) gin, simple syrup, lemon juice and egg white. 30 seconds or more.

  3. Add ice and shake until shaker is frosty.

  4. Strain into a glass and add a sprig of sage for garnish.
