Caesar Wedge with Shrimp

Ingredients:

romaine hearts

medium or large shrimp

caesar dressing (find here)

shaved parmesan cheese

Optional: toasted bread or croutons

Instructions:

  1. Cut romaine lengthwise leaving the stem intact

  2. Lightly coat shrimp with olive oil and season with salt and pepper; grill just one minute on each side.

  3. Coat shrimp with Caesar dressing and wrap in foil; return to grill to finish cooking.

  4. Brush romaine with Caesar dressing and place on hot grill - about one minute on each side.

  5. Plate the romaine and top with shrimp. Thin remaining dressing with a little water or milk and drizzle over the top. Top with parmesan and serve with bread or croutons
