Beet Salad

Ingredients:

beets (one small or medium per person)

arugula 

      Optional: add watercress

goat or feta cheese

pistachios

balsamic or lemon dressing (see dressings)

Instructions:

  1. Boil beets until tender - 20 to 40 minutes, depending on size. A knife should go through easily

  2. When cooled, peel and cut into desired sizes

  3. Toss beets in dressing and let marinate for 15 minutes to 2 hours

  4. Toss arugula & watercress with dressing and plate with beets, pistachios and cheese
