Vanilla Cake

Ingredients:

3 1/2 cups flour 

2 tablespoons cornstarch

2 teaspoons baking powder

2 teaspoons salt

1 teaspoon baking soda

2 sticks  butter, room temperature 

2 cups sugar

3 tablespoons vegetable oil 

1 tablespoon pure vanilla extract 

3 large eggs, room temperature 

2 large egg yolks, room temperature 

2 cups buttermilk

cream cheese frosting (recipe here)

​Instructions:

  1. Lightly spray two 9-inch cake pans with cooking spray and line the bottoms with parchment paper then lightly coat the paper with nonstick spray.

  2. Sift together dry ingredients in a large bowl. 

  3. Beat the butter, sugar, oil and vanilla until light and fluffy.

  4. Add the eggs and yolks one at a time, mixing well each time. 

  5. Add dry ingredients alternating with buttermilk.

  6. Pour batter evenly into the prepared pans. Bake at 350 degrees for 35 to 40 minutes.

  7. Let cakes cool completely before removing from pans and frosting.
