Twice Baked Potatoes

Ingredients: 

russet potatoes

cheddar cheese, shredded

bacon

green onions

butter

sour cream

salt and pepper

Instructions:

  1. Place strips of bacon on a sheet in the oven and cook at 400 degrees until crisp, about 25 minutes. Remove and place on paper towel.

  2. Smear potato with butter or oil. Bake in oven at 400 degrees until cooked through - about an hour.

  3. Cut the top off of each potato (lengthwise.) Carefully scrape out the inside without ripping the shell. Leave a small rim of potato intact for support. 

  4. Gently mix potato, salt and pepper, butter, sour cream, cheese, green onion and bacon and fill shells with this mixture.

  5. Top with a little more cheese and bake at 350 for about 15 minutes.
