Tomato Cabbage Soup

Ingredients:

1 lb ground beef

2 stalks celery, chopped

1 sm onion, chopped

2 cloves garlic, minced

24 oz tomato sauce

4 cups cabbage

3 carrots, bite size pcs

4 cups beef broth

1/2 cup water

1/2 cup rice or orzo

1 bay leaf

3 tbl brown sugar

salt, pepper, cayenne if desired

Instructions:

  1. Brown ground beef in large soup pot or dutch oven.

  2. Add onion, celery and garlic and cook until softened. Season well at this point.

  3. Add tomato sauce, sugar, broth, water, cabbage, rice or orzo and bay leaf.

  4. Par cook carrots separately and add to the pot.

  5. Check for seasoning again and simmer until cabbage & carrots are softened and rice is cooked through. About 20 minutes. Add more water or broth if needed.
