Thai Dumpling Soup

Ingredients:

1 tbl butter

2 tble olive oil

1/2 medium onion, chopped

3 stalks of celery with leaves, chopped 

3 tbl green curry paste

1 tsp anchovy paste (or fish sauce)

salt, pepper and cayenne

6 cups chicken broth

1 1/4 cup coconut milk

3 or 4 kinds of Asian style veggies like: red or green bell pepper, green beans, snow peas, egg plant...

mushrooms, sliced

pot stickers or Asian dumplings

handful fresh basil

Instructions:

  1. Saute onion and celery with butter and olive oil in a large dutch oven until tender.

  2. Add anchovy paste, curry and seasoning. Cook for another minute.

  3. Add broth and coconut milk and bring to a simmer.

  4. Add veggies, mushrooms and pot stickers, simmer for 3 to 5 minutes.

  5. Add basil and serve when wilted down.
