Sweet & Sour Shrimp

Ingredients:

1/4 cup plum sauce

1/4 cup ketchup

2 tsp soy sauce

1 tbl honey

crushed red pepper flakes

15 - 16 large shrimp, cleaned and peeled

olive oil

butter

scallions, whites and greens

serrano chili, chopped

garlic, minced

fresh ginger, grated

2 1/2 tbl rice wine vinegar

toasted sesame seeds

rice for serving (cooked in chicken broth)

Instructions:

  1. Combine plum sauce, ketchup, honey, red pepper flakes and soy sauce. Set aside

  2. Season shrimp and stir fry in olive oil and butter. Remove and set aside.

  3. Add a little more butter if needed, stir fry whites of scallions, garlic, ginger and serrano chili for about 2 minutes.

  4. Add vinegar to deglaze and simmer another 2 minutes.

  5. Add plum sauce and bring to simmer. Return shrimp and add toasted sesame seeds and  scallion greens.

  6. Cook on low until shrimp are well coated with sauce. Top with extra sesame seeds and extra scallion greens. Serve with rice.
