Sweet & Sour Meatballs

Ingredients:

1 lb ground beef
onion, finely chopped

1/4 cup milk

1/2 cup bread crumbs

1 tsp salt

1 tsp worcestershire
1 egg

olive oil

batsmati rice

chicken broth

For Sauce:

1/2 cup brown sugar

1 tbl cornstarch

10 oz can of chunked pineapple

1/4 cup white vinegar

1 tbl soy sauce

1/2 green bell pepper, chopped

Instructions:

  1. With your hands, mix first seven ingredients (all but oil) - without over mixing

  2. Shape into meatballs, dip in olive oil and place on sheet pan lined with parchment paper.

  3. Bake in a 400 degree oven for 20 to 25 minutes...depending on size of meatballs.

  4. Mix first five sauce ingredients and  bring to a simmer. Add meatballs and bell pepper and simmer another ten minutes.

  5. For rice: cook as instructed on package using broth instead of water.
