Sweet Potato Soup
Ingredients:
1 medium sweet potato
1/4 roasted red bell pepper
1 tsp finely grated ginger root
1 1/2 tsp olive oil
1 cup of chicken (or vegetable) broth
Optional: heavy cream

Instructions:

Peel sweet potato and cut into small chunks; boil until tender (about 5-7 minutes) save some of the water

Mix all ingredients in a blender until smooth. If it is too thick, use some of the reserved sweet potato water
-
Warm in a pan over medium heat and add cream if desired.

Garnish with chopped pecans
