Sausage Stuffed Squash

Ingredients:

2 acorn squash (or any favorite)

1# spicy Italian sausage, casing removed

1 small onion, chopped

3 stalks celery chopped

3 garlic cloves, minced

shredded cheese blend

 

Instructions:

  1. Cut the squash in half and remove seeds. If you need to, shave a little off of each 'bottom' so the squash will sit level on a plate.

  2. Place in dish, cut side down; add 1/2 inch of water bake at 350 for 1 hour to 1 1/2 hours. test doneness with a fork

  3. Saute sausage, celery and onion until cooked through; add garlic toward the end and continue to cook for another couple of minutes.

  4. Scoop out some of the squash to make 'bowls' to hold sausage mixture

  5. Stir extra squash into sausage mixture

  6. Place shells on baking sheet and fill with mixture; top with cheese and broil until cheese is melted.
