Ingredients:

2 3/4 cups flour

1 tsp salt

1 tsp yeast

1 egg

3 tbl olive oil

3/4 cup water

Fillings:

Use any combination: pico de gallo, cilantro, a good melting cheese, olives, pepperoni, tomato sauce, basil, pesto, onion, garlic...get creative just make sure what you are using is cut small and not too wet.

Instructions:

  1. Mix flour, salt and yeast. Set aside. (I add seasoning to my flour - like Italian, curry powder, garlic powder or cumin etc)

  2. Whisk egg, oil and water in another bowl.

  3. Mix the two together and form a rough ball.

  4. Cover and keep in a warm place for 12 to 14 hours.

  5. When the dough is ready. Prepare your fillings. You will have three layers to fill. You can make them all the same or all different. It is up to you. Remember to make sure nothing is too wet and that anything like olives or pepperoni is cut very small. You will need about a cup of filling for each of the three layers...except for sauces, then maybe a 1/4 cup at the most.

  6. Lightly flour a clean surface and work the dough until smooth. Divide into four equal parts.

  7. Roll out the first piece to at least a 9 inch circle. This does not have to be perfect as you will trim the edges before shaping.

  8. Lay this first piece of dough on a parchment lined baking sheet and top with filling leaving an empty space at least 1/2 inch from the edge.

  9. Roll out the second piece of dough in the same way lay it on top the first. Top with filling.

  10. Repeat with a third piece of dough, fill and top with the final piece of dough.

  11. Set a 9 inch plate on top and trim around the edges. Remove the plate and pinch the edges to close.

  12. The best way to figure out how to shape the star is to go online and watch a video.

  13. After shaping, cover and let sit for 30 to 40 minutes in a warm location.

  14. Just before baking, brush with an egg wash. You can also top with red pepper flakes or parmesan cheese.

  15. Bake at 325 for 25 to 30 minutes or until golden brown.

  16. Best served warm with a dipping sauce.
