Spring Rolls

Ingredients:

red bell peppers, julienned

cucumbers, shaved or julienned

bib lettuce, torn into 1x2 inch pieces

chopped fresh mint & cilantro

mango julienned

cooked shrimp or pork

crushed peanuts

cooked vermicelli rice noodles

rice paper

 

Instructions:

1. Prepare all ingredients and place in order of assembly. Put softer ingredients on the 'outside' where they touch the wrapper. This prevents sharp edges from ripping paper.

3. Fill a shallow dish with lukewarm water (like a pie dish) One at a time, dip rice paper into the water for about 20 seconds; just until it starts to soften 

4. Fill rice paper with desired ingredients and wrap like a burrito

5. Serve with peanut sauce (below)

 

Helpful hint: Shake or dab off extra water on rice paper as it will continue to soften and could burst after rolls are made.

Peanut Sauce

Ingredients:
peanut butter

fish sauce

white wine vinegar

soy sauce

honey

*sriracha (or chili paste)

*lime juice

*minced garlic

*fresh ginger

​

Instructions:

Work ingredients into texture and taste preference. The base includes the first 5 ingredients - *others are optional.
