Ingredients:

2 cups flour

1 1/2 tsp baking powder

1/2 tsp salt

4 tbl sugar

6 tbl butter, cold, cut in chunks

1/3 cup heavy cream or buttermilk

1/4 cup liqueur (see combos below)

1 cup fresh fruit (see combos below)

Optional: 1/4 cup chocolate chips or nuts

Glaze:

2 to 3 tbl freshly squeezed lemon juice*

1 cup confectioners' sugar

1 lemon, zest finely grated

Fun Combos:
Strawberries & Prosecco

Cherries & Rum

Blueberries & Limoncello

Or replace liqueur with more cream

Instructions:

  1. Sift together the dry ingredients. Using a processor, pastry tool or your fingers, mix flour and cold butter until it looks like coarse crumbs.

  2. Gently add liquids with a wooden spoon or your hands - do not over mix.

  3. Gently fold in fresh fruit (and other options if desired).

  4. If your dough is too dry to hold together, add a little more liquid.

  5. Press the dough out on a lightly floured surface into a circle that is 1 1/2 to 2 inches high. Cut into 6 pie slices.

  6. Place the scones on an parchment lined cookie sheet and brush the tops with egg wash.

  7. Bake for 15 to 20 minutes at 400 degrees until golden brown. Set aside to cool.

  8. GLAZE: Whisk the glaze ingredients until thick and smooth. Too thick? Add more liquid. Too thin? Add more confectioners' sugar.  Drizzle over cooled scones. Let it set a minute before serving.
