Scalloped Potatoes & Ham

Ingredients:

2 cups milk

1 1/2 cups water or broth

1/2 tsp salt

1/2 tsp pepper

1/2 cup onion

1/3 cup flour whisked into 1/4 cup water

1 inch Velveeta cheese

2 cans mushroom soup

3 - 4 potatoes

Instructions:

1. Whisk together the first 5 ingredients over medium heat

2. Thicken with flour and water mixture

3. Mix in cheese and mushroom soup

4. Peel potatoes and use either a mandolin or spiralizer to make very thin chips

5. Spray the bottom of large casserole dish and layer 1/3 of potatoes, 1/3 of liquid until full.

6. Bake at 350 for 1 hour; turn down to 275 and cook for 1 1/2 hours until potatoes are soft.
