Sausage Kale Soup

Ingredients:

1 lb Italian sausage

1 large onion

2 cloves of garlic, minced

salt, pepper and cayenne

8 oz chicken broth

2 cups water

2 large russet potatoes

6 strips of bacon

2 cups kale

3 cups heavy cream

Instructions:

  1. Crisp up bacon and set aside

  2. Brown sausage in soup pot

  3. Add onion, garlic and stir for 2 or 3 minutes; add salt, pepper and cayenne

  4. Add broth and water; mix in potatoes and cook until potatoes are done

  5. Turn down heat and add bacon, kale and cream.

  6. Heat through and serve
