Salt & Pepper Crackers

Ingredients:

1 1/4 cup flour

1/2 cup grated parmesan

1/2 tsp pepper

1/4 tsp salt (1/2 tsp if you are not topping with sea salt)

4 tbl cold butter cut into cubes

1/4 cup + 2 tbl milk or cream

sea salt for topping - plain or flavored

Optional in the dough: 1 tsp rosemary, pinch of cayenne, 1/2 tsp garlic powder...etc

Instructions:

  1. Combine flour, cheese, salt & pepper (add rosemary, garlic or other seasonings at this point if desired)

  2. Mix in butter. If you don't have a processor just use your hands. Create fine pebble mixture.

  3. Add milk or cream and work with your hands into a ball.

  4. I find it easiest to roll out the dough on parchment paper as thin as possible. Cut into desired shapes and remove scrap pieces. Slide the parchment onto the cookie sheet for baking.

  5. Brush with melted butter, poke with a fork and top with sea salt. 

  6. Bake at 400 degrees for about 12 minutes until the edges start to become golden brown.
