Salmon Cakes

Ingredients:

1lb salmon (chopped)

1/4c bread crumbs

egg

scallions

jalapeno

cucumber

bibb lettuce cups

 

Sauce:

¼c mayo

1T cilantro

onion

wasabi paste

salt and pepper

Instructions:

  1. Make sauce and chill

  2. Combine salmon, egg, bread crumbs, scallions and jalapenos; form into patties

  3. Bake or fry patties until cooked through

  4. Serve on lettuce cup (or bun) with thinly sliced cucumber and sauce
