Salmon Burger

Ingredients:

salmon fillets, skinless

lemon pepper seasoning

soft rolls

leafy greens

 

Sauce:

1 cup mayonnaise

1/2 teaspoon white wine vinegar

fresh basil leaves

2 tablespoons chopped scallions

1/4 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

3 teaspoons capers, drained

 Instructions:

  1. Combine sauce ingredients (all but capers) in processor until combined. Add capers and pulse 2 or 3 times

  2. Season salmon with lemon pepper, wrap in foil and bake at 375 for 10 to 15 minutes.

  3. Assemble sandwich: bun, sauce, greens and salmon

 

Easier option: Grill salmon as directed, serve on bun with regular mayo, greens and a thin slice of raw onion.
