Apple Rosettes
Ingredients:
1 store bought pie crust, room temp
1 tart apple
butter , softened
sugar
cinnamon

Special items: spiralizer or mandoline and a mini muffin tin
Makes about 1 doz.
Instructions:

Slice apples very thin to make half moons. They have to be thin in order to roll, otherwise they break. Best to use a spirializer or mandoline but if you do not have either of those, slice them with a knife as thin as possible and then boil them just enough to make them pliable.

Cut out 1 1/2 by 8 inch strips of pie crust (no need to be exact - longer for regular muffin tins)

Spread thick layer of soft butter onto crust strips. Sprinkle generously with sugar and cinnamon.

Layer apple half moons overlapping along the length of the crust strip with the curved edge above the top. Stopping about 1/2 inch from the end.

Roll starting with the 'apple end' and ending with the 'bare end'.

Place into greased mini muffin tin and bake at 350 for 25 to 30 minutes.
