Roasted Artichoke
Ingredients:
whole fresh artichoke
2 cloves garlic
olive oil
salt & pepper

dressings:
mayo
balsamic vinegar
butter
grated Parmesan
lemon pepper seasoning

Instructions:

Preheat your oven to 425 degrees.

Prepare the artichoke: cut off about 1/3 of the top and the bottom few leaves and the stem. Using kitchen sheers, cut off the tip of each leaf.

Lay out a sheet of foil (enough to completely wrap of the artichoke) and drizzle olive oil on foil. Using one hand, turn the artichoke all around in the in oil until coated. With the other hand, salt and pepper the whole thing.

Tuck the garlic cloves into a couple of places between the leaves on top.

Wrap tightly and place in the oven for one hour and ten minutes.
For dressings:

First dressing: mix mayo and balsamic dressing.

Second dressing: melt butter and add Parmesan and seasoning.
