Rainbow Cake

Ingredients:

1/2 cup butter, softened

3 tbl vegetable oil

3/4 cup sugar

1 1/2 tbl orange or vanilla extract

3 eggs

1 3/4 cup flour

3 tsp baking powder

1/2 tsp salt

3/4 cup whole milk

Instructions:

  1. Mix butter, oil, sugar and extract, just until combined with slow speed of mixer.

  2. Add one egg at a time, mixing between each, just until combined.

  3. Mix dry ingredients together and then mix them into wet mixture alternately with milk. Use a wooden spoon at this point and do not over mix.

  4. Divide mixture into 6 separate bowls. Start with just 1/4 cup and move up the portions with each bowl. You will have to eyeball this and the last bowl needs to have significant amount.

  5. Color each with the colors of the rainbow: purple, blue, green, yellow, orange and red.

  6. In a greased and lined 9 inch pan, layer your cake batter. First put in the largest amount. Tap the pan on the counter (it will not cover the bottom at this point). Add the next largest to the center and tap the pan...repeat until you end with the smallest amount.

  7. Bake at 350 for 20 to 25 minutes until it springs back then pressed with your finger or a toothpick comes out clean.

  8. Cool completely before frosting.

  9. To make a layer cake, repeat the recipe and process.
