Quinoa Bowl

Ingredients:

red (or multicolor) quinoa (a little goes a long way; 1/4 cup per person)

vegetable or chicken broth (enough to generously cover quinoa)

avocado bite size chunks

tomato bite size chunks

red onion, chopped

chopped mint and/or basil

sunflower seeds

raisins

olive oil

coarse sea salt

 

Instructions:

  1. Rinse quinoa and bring to boil in broth; simmer until quinoa breaks open and is tender. You may still have liquid and that is ok, just drain

  2. Fold in next six ingredients; drizzle with olive oil and add sea salt
