Quick Paella

Ingredients:

1 c. Chorizo

3 or 4 chicken thighs cut into cubes

1 onion

garlic

2T tomato paste

½ cup dry white wine 

1 c. chicken stock

8 oz package of Spanish rice (do not use seasoning)

8 medium shrimp (cleaned & shelled)

12 mussels

1 c. frozen peas

cayenne

 

Instructions:

  1. Using a Paella pan or large skillet or pot, cook Chorizo in olive oil, add chicken and brown on all sides.

  2. Add onion and garlic

  3. Add rice and cayenne and lightly toast rice

  4. Add tomato paste, wine and chicken stock

  5. Cover and cook for 20-25 minutes

  6. Add shrimp, mussels and peas and cook until shrimp is pink and mussels have opened (discard any that do not open)

  7. Season with salt and pepper
