Purple Potato Soup

Ingredients:

butter

olive oil

1/2 lg onion, chopped

4 stalks celery, chopped

2 cloves garlic, minced

1 1/2 lbs purple potatoes, peeled and cut

2 cups purple cabbage, rough chop

4 cups chicken broth

1/2 cup heavy crm

seasoning: salt, pepper, cayenne, marjoram​

Instructions:

  1. Saute onion and celery in butter and olive oil

  2. Add garlic and seasoning; cook another minute or so

  3. Add broth, cabbage and potatoes; bring to boil then simmer until potatoes are tender

  4. Carefully transfer to blender and puree until smooth.

  5. Return to pot, add cream and heat through.

  6. Garnish with sour cream and fresh marjoram.
