Potato Salad

Ingredients:

yukon gold potatoes

hard boiled eggs

dill pickles, chopped

celery, chopped

red onion, chopped

Dressing:

mayo

yellow mustard

pickle brine

celery seed

salt & pepper

smoked paprika

Instructions:

  1. Peel (optional) and cut potatoes into small bite-sized cubes. Boil in salted water until tender but not mushy. Drain and let cool.

  2. Make dressing to taste and chill.

  3. When potatoes and eggs are cool, combine everything and chill before serving.
