Potato Buns
Grandma Hannah
Ingredients: 3 doz
2 medium potatoes
1/2 cup warm water
1 pkg yeast
1 cup milk, scalded
3/4 cup shortening
5 cups flour
2 eggs, well beaten
1/2 cup sugar
1 tsp salt

Instructions:

Peel, and cook potatoes until tender. Rice or mash them. This should be about 1 cup.

Dissolve yeast in 1/2 cup warm water. Set aside to 'bubble'

Mix potato, milk and eggs until well blended.

Add yeast, shortening, sugar, salt and 1 cup of flour and mix well.

Let rise in a warm place for two hours.

After rising, add remaining 4 cups flour and knead well.

Cover and let rise to double; punch down and shape

Let rise again for 15 minutes and bake at 375 for 15 to 20 minutes
