Potato Buns

Ingredients: 3 doz

2 medium potatoes

1/2 cup warm water

1 pkg  yeast

1 cup milk, scalded

3/4 cup shortening

5 cups flour

2 eggs, well beaten

1/2 cup sugar

1 tsp salt

Instructions:

  1. Peel, and cook potatoes until tender. Rice or mash them. This should be about 1 cup. 

  2. Dissolve yeast in 1/2 cup warm water. Set aside to 'bubble'

  3. Mix potato, milk and eggs until well blended.

  4. Add yeast, shortening, sugar, salt and 1 cup of flour and mix well.

  5. Let rise in a warm place for two hours.

  6. After rising, add remaining 4 cups flour and knead well.

  7. Cover and let rise to double; punch down and shape

  8. Let rise again  for 15 minutes and bake at 375 for 15 to 20 minutes
