 Curried Pork Tenderloin

Ingredients: 

1 pork tenderloin

1 leek, rinsed and finely shredded

1 tbl curry paste or garam masala (more to taste if desired)

1 1/4 cups coconut cream

Instructions:

  1. Trim pork and cut into 8 pieces; pound to 1/2 inch thickness.

  2. Season pork with salt and pepper and brown in olive oil and butter. Set aside.

  3. In the same skillet, saute leek in a little olive oil for just a minute, then add remaining ingredients and bring to a boil, reduce temp.

  4. Add pork and coat well. Cook uncovered until internal temp reaches 145 degrees - 3-4 minutes

  5. Serve with rice or sauteed cabbage.
