Pork & Grapefruit Appie

Ingredients:

bibb lettuce cups (or mini taco shells)

For Pork

1/2 lb ground pork

1 tsp ginger

2T fish sauce

2T fresh lime juice

2tsp brown sugar

2-3 scallions cut on the diagonal

For Salad

3T toasted coconut (flake or shredded)

3T chopped peanuts

1/2 c chopped fresh mint

3tsp chili sauce (like Sambal Oelek)

1 md pink grapefruit, supremed

​

Instructions:

  1. Mix together fish sauce, lime juice and brown sugar; set aside.

  2. Supreme the grapefruit and put the slices into a bowl. (There are lots of good Youtube videos that show you how to supreme citrus)

  3. Lightly toast coconut and combine with grapefruit. Add mint and peanuts tossing everything with the chili sauce.

  4. Lightly brown pork, add ginger and continue cooking until no longer pink.

  5. Add fish sauce mixture and heat through. Remove from heat and add scallions.

  6. Set up lettuce cups (or mini taco shells) and layer on pork and grapefruit salad.
