Peas Please

Ingredients: 

frozen peas

snow peas

sugar snap peas

4 slices bacon, crisp and crumbled

2 tbl flour

1 1/2 cup chicken broth

1/2 cup heavy cream

salt and pepper

Instructions:

  1. Blanch peas: drop snow peas in boiling water for 4 minutes then right into an ice bath. Drop sugar snap peas in boiling water for 3 minutes then right into an ice bath. Drop frozen peas into boiling water for 30 seconds then right into an ice bath. Lay peas out onto a paper towel to dry.

  2. Cut snow peas lengthwise.

  3. Whisk flour into chicken broth and add to large sauce pan with cream. Heat until thickened and season to taste.

  4. Add peas into cream mixture and heat through. Toss in bacon and serve warm.
