Panna Cotta

Ingredients for Panna Cotta:

2 tablespoons fresh lemon juice

1 (.25 oz) powdered gelatin (like knox)

3 cups heavy cream

1/2 cup sugar

3 tablespoons lemon zest

Instructions for Panna Cotta:

  1. Put lemon juice in small bowl and add gelatin. Mix and let stand 15 minutes.

  2. Combine cream, sugar and zest in saucepan over medium heat; bring to simmer.

  3. Mix in gelatin and stir until dissolved.  Remove from heat.

  4. Strain mixture then divide into serving containers.

  5. Place uncovered in fridge until set (about 4 hours) Cover with plastic wrap.

  6. Garnish as desired or add raspberry gelee.

Ingredients for Gelee:

1/4 cup water (or limoncello)

1 tsp knox gelatin

2 cups fresh raspberries or strawberries

1/4 cup sugar

juice of one lemon

Instructions for Gelee:

  1. Add gelatin to water (or limoncello) and let set until firm.

  2. Combine remaining ingredients over low heat; mash down fruit and simmer until sugar is dissolved. 

  3. Strain fruit mixture then add in gelatin. Stir over low heat until gelatin is dissolved. 

  4. Let cool to room temp and then pour over panna cotta. Chill several hours until set.
