Oatmeal Crackers

Ingredients:

1 cup quick oatmeal

1 cup boiling water

1 1/2 cups flour

1/2 tsp salt

1 tsp baking powder

4 tbl butter melted

sea salt for topping - plain or flavored

butter melted (to brush on before baking)

Optional in the dough: rosemary, cayenne, garlic powder...etc

Instructions:

  1. Combine dry ingredients and set aside.  (add rosemary, garlic or other seasonings at this point if desired)

  2. Soak oatmeal in boiling water for 10 minutes.

  3. Add melted butter to oatmeal and then add to flour mixture. Gently work together and divide dough into 2 balls.

  4. I find it easiest to roll out the dough on parchment paper as thin as possible. Cut into desired shapes and remove scrap pieces. Slide the parchment onto the cookie sheet for baking.

  5. Brush with melted butter and top with sea salt. 

  6. Bake at 400 degrees for about 12 minutes until the edges become golden brown.
