Mushroom Chicken

Ingredients:

2 chicken cutlets or breasts

4oz white & cremini mushrooms

1 clove garlic

½ c chicken stock

flour

butter

olive oil

 

Instructions:

  1. Season chicken with salt and pepper and cook in pan with hot olive oil. 2 minutes each side. Place on baking sheet and place in 350 degree oven for 10 minutes. Let rest

  2. Using the same chicken pan, sauté mushrooms in butter and add garlic. Season with salt and pepper (cayenne too)

  3. Add  flour into chicken stock and whisk. Stir into mushroom pan and simmer until about half; remove from heat. OPTIONAL: add a couple tble of sour cream if desired

  4. Serve with mashed potatoes or Israelie coucous and a veg
