Mulligatawany Soup

Ingredients:

olive oil

butter

1 cup onion, diced

1 cup celery, diced

1 cup carrots, diced

2 tbl curry paste or 4 tsp curry powder

1/2 cup uncooked rice

2 tbl flour

salt, pepper, cayenne

1/2 tsp dried thyme

6 to 8 cups chicken broth

1 granny smith apple, peeled and diced

1 1/2 cup rotisserie chicken

3/4 cup heavy cream or whole milk

Instructions:

  1. In soup pot: sweat down the onion, celery and carrot with 2 turns of olive oil and 1 tbl butter.

  2. Add curry paste, rice and seasoning, stir until well combined.

  3. Add flour and stir until well incorporated.

  4. Add broth and simmer for 15 to 20 minutes until rice is cooked and carrots are tender.

  5. Add apple and chicken. Simmer about 15 minutes

  6. Temper cream with a little of the warm broth and add to soup. Heat through and serve.
