Baked Beans

Ingredients:
1 lb of northern beans 

1/2 large onion, diced

2 stalks of celery, diced

1 large jalepeno, diced

1 tsp mustard 

1/4 c molasses

1/4 c ketchup

salt & pepper

1/2 lb diced ham

3 strips diced raw bacon

Instructions:

  1. Soak beans in cold water in the refrigerator overnight

  2. Drain and rinse. Transfer beans to clean water in a heavy pot or dutch oven. Simmer until soft and tender. Drain and rinse.

  3. Combine mustard, ketchup, molasses, salt and pepper in a small bowl and set aside.

  4. In an oven safe dish, toss together beans, onion, celery, jalapenos, raw bacon and ham. 

  5. Pour molasses mixture over the top and then pour in enough water to just cover the top. 

  6. Bake at 250 for at least 4 hours.
