Molten Lava Cake

Ingredients:

½ c butter

6oz bittersweet (good) chocolate chopped 

2 Lg eggs

2 egg yolks

¼ c and 2T brown sugar

1t vanilla

pinch of salt

3T flour

Instructions:

  1. Butter six 6oz ramekins (be generous with butter and do not use cooking spray). Set ramekins on baking sheet

  2. Melt butter in bowl; add chocolate and stir until completely melted

  3. In medium bowl, beat eggs, yolks, sugar, vanilla and salt until thickened and pale.

  4. Fold in melted chocolate and flour.

  5. Spoon into ramekins and bake for 9 minutes at 450 degrees; cool for 2-3 minutes. Hold ramekin with towel and invert cake onto plate.

  6. Serve warm with ice cream. You can add fruit, powdered sugar, chocolate ganache or caramel sauce.

 

*The batter can be spooned into ramekins, covered and refrigerated for several hours before baking. Just make sure to get them to room temperature before baking.
