Minestrone Soup

Ingredients:

3 med carrots, sliced

1 onion, chopped

3-4 stalks of celery, chopped

2 cloves of garlic, minced

14 oz can diced tomatoes

14 oz can fire roasted tomatoes

1 small can kidney beans

1 small can great northern beans

1 cup small pasta

5 1/2 cups vegetable or chicken broth

2 large handfuls of spinach, escarole or kale (they wilt way down) 

1 small handful basil plus more for garnish

grated parmesan cheese for garnish

salt, pepper, cayenne

Instructions:

  1.  Put a pat of butter in a heavy soup pot and cook down carrots, onion and celery until tender.

  2. Add garlic and seasoning and stir another two minutes.

  3. Add everything else except spinach and basil and simmer until pasta is cooked.

  4. Add spinach and basil and cook for a few more minutes until they are wilted down.

  5. Garnish with freshly grated parmesan cheese and fresh chopped basil.
