
Meatballs Marinara

Ingredients:
2# ground beef
1# ground pork
1/2 onion finely chopped
3 garlic cloves minced
1/2 cup fresh parsley chopped
3 eggs
1 large potato
1/2 cup of finely grated parm
2 tsp salt
1 tsp ground pepper
Instructions:
- 
Start marinara sauce (see recipe here)
 - 
Peel potato, cut into chunks and boil until soft. Drain, add salt & pepper, butter and milk. Mash thoroughly and set aside to cool.

Take out all ingredients and allow to come to room temp (about 30 minutes)
 - 
Saute onion until translucent, add garlic and cook another 3-4 minutes; set aside to cool
 - 
Add everything into a large bowl and mix with hands until completely combined.
 - 
Preheat oven to 400 degrees and prepare sheet pans with parchment paper
 - 
Form meatballs by rolling between your hands - about the size of a large golf ball - makes about 3 dozen
 - 
Bake for 15 minutes, transfer meatballs into marinara sauce and simmer on low for about 30 minutes.
 - 
Once plated, top with more grated parm and serve with crusty bread.
