Meatballs Marinara

Ingredients:

homemade marinara 

2# ground beef

1# ground pork

1/2 onion finely chopped

3 garlic cloves minced

1/2 cup fresh parsley chopped

3 eggs 

1 large potato

1/2 cup of finely grated parm

2 tsp salt

1 tsp ground pepper

Instructions:

  1. Start marinara sauce (see recipe here)

  2. Peel potato, cut into chunks and boil until soft. Drain, add salt & pepper, butter and milk. Mash thoroughly and set aside to cool.

  3. Take out all ingredients and allow to come to room temp (about 30 minutes)

  4. Saute onion until translucent, add garlic and cook another 3-4 minutes; set aside to cool

  5. Add everything into a large bowl and mix with hands until completely combined.

  6. Preheat oven to 400 degrees and prepare sheet pans with parchment paper

  7. Form meatballs by rolling between your hands - about the size of a large golf ball - makes about 3 dozen

  8. Bake for 15 minutes, transfer meatballs into marinara sauce and simmer on low for about 30 minutes.

  9. Once plated, top with more grated parm and serve with crusty bread.
