Lemon Coffee Cake

Ingredients:

2 cups sifted flour

3 tsp baking powder

1 tsp salt

1/2 cup shortening

1/2 cup sugar

1 cup milk

2 eggs

1/4 tsp lemon extract

Topping:

1/2 cup sugar

1 tbl lemon zest

1/8 tsp nutmeg

1 tbl melted butter.

Instructions:

  1. Combine dry ingredients and set aside.

  2. Mix shortening and sugar. Add eggs and mix well.

  3. Add flour mixture to sugar mixture alternately with milk and extract.

  4. Put in loaf pan and sprinkle with topping. 

  5. Bake at 350 for 30-35 minutes.
