Italian Meatballs

Ingredients:

1/2 lb ground beef
1/2 lb ground pork
1/2 lb ground veal
3 slices of Italian bread soaked in milk or water then squeezed dry
1/2 medium onion, finely chopped
2 T parsley, finely minced
1 tsp of garlic powder
1/2 cup grated Pecorino-Romano cheese
2 eggs

olive oil

butter

Instructions:

  1. Mix all of the ingredients - without over mixing

  2. Shape into bite-size meatballs

  3. Brown in skillet with olive oil and butter

  4. Stir in marinara sauce and let simmer 15 - 20 minutes (add water and more marinara as needed to keep the sauce from drying out)
