Indian Pulao with Lamb

Ingredients:

stew cut cubes of lamb or chicken

1 cup onion chopped

1/2 cup red bell pepper chopped

2 cups fresh tomatoes chopped

1/2 cup par cooked carrots, pea size

1/2 cup par cooked potatoes, pea size

1/c cup frozen peas

3 cups cooked rice

1 tbl ginger garlic paste

1 tsp cumin

1/2 tsp turmeric

1/2 tsp red chilly powder

1/2 tsp cayenne 

3 tsp masala

3 tbl cilantro chopped

1 tbl butter

Instructions:

  1. In a large dutch oven, brown lamb (or chicken) in a little olive oil and butter. Season with salt and pepper.

  2. Remove meat and set aside. In the same pan, saute onion and bell pepper - adding a little more olive oil and butter.

  3. Add all spices (except masala). Cook while stirring for one minute.

  4. Add tomatoes & masala. Cook for another 2 to 3 minutes.

  5. Add carrots and potatoes and cook for 2 minutes.

  6. Add peas, lamb, rice and butter. Cook until heated through.

  7. Add cilantro and serve.
