Hasselback Potatoes


russet potatoes


olive oil

chives, chopped

garlic powder

salt and pepper


cheddar cheese, shredded


sour cream


  1. Thinly slice all along the potato being careful not to go all the way to the bottom.

  2. Melt butter, drizzle in some olive oil and season with salt, pepper and garlic powder.

  3. Add chives and brush onto potatoes making sure to get into all the crevices.

  4. Bake potato in a 425 degree oven for 30 minutes. Brush on more butter mixture.

  5. Continue baking for another 45 minutes.

  6. Serve as is or top with cheese, bacon, sour cream and left over chives
