Grilled Shrimp Salad

Ingredients

large shrimp deveined and peeled 

chili powder

sweet corn, husks removed, cleaned

butter

romaine lettuce, chopped

red onion, sliced thin

tomatoes, cut into wedges

avocado, sliced or diced

Dressing:

fresh lime juice

1 tablespoon olive oil

2 tablespoon honey

½ teaspoon salt

½ teaspoon ground cumin

coarse ground black pepper

 

Instructions:

  1. In small bowl, whisk together dressing and set aside.

  2. Smear butter on corn, salt and pepper it and wrap in aluminum foil. 

  3. Grill corn for about 15 minutes, turning occasionally; remove from grill, and cut kernels off of corn cob

  4. Toss shrimp with olive oil and chili powder

  5. Grill shrimp until pink, turning once

  6. Toss lettuce and red onion in dressing and plate with shrimp, corn, avocado and tomato wedges
