Green Curry Chicken

Ingredients:

onion 

green bell pepper 

zucchini

eggplant

lemongrass

1T ginger

3T Thai green curry paste

1 lime zested

3 c coconut milk

¾ c chicken broth

chicken

basil

Instructions:

  1. Saute onion, zucchini, eggplant and pepper to soften; split lemongrass wedge and smash to release flavor.

  2. Add lemongrass, ginger, curry paste and lime leaves and stir for 1-2 minutes

  3. Add milk and broth; chicken and salt. Simmer on low 10 to 15 minutes. Add basil right at the end

  4. Serve with rice
