Granola Bars

Ingredients:

12 oz granola

2 cups crispy rice cereal

1/2 cup dried cranberries 

1/2 cup chopped almonds

1/2 cup shelled pistachios

1/2 cup sunflower seeds

1 cup packed brown sugar

1 cup light corn syrup or honey

3/4 cup peanut butter

1 tablespoon vanilla

Instructions:

  1. In a large bowl, mix together the first 5 ingredients and set aside

  2. Mix over medium heat: brown sugar, corn syrup, peanut butter and vanilla, until it comes to a boil.

  3. Combine with granola mixture.

  4. Roll into balls or spread in a sheet pan and cut when cooled

 

NOTE: Change up some of the ingredients to suit your taste. Switch out dried blueberries or chocolate chips instead of dried cranberries. Use pecans or pepitas or walnuts instead of almonds, pistachios and sunflower seeds.
