Glazed Salmon

Ingredients:                                    

salmon filets

lemon pepper seasoning

3 Tbl brown sugar

4 tsp dijon mustard

1 Tble low-sodium soy sauce

1 tsp white wine vinegar

1 cup red quinoa (or brown rice)

2 cups chicken broth

avocado

jalapeno

grape tomatoes

corn

cilantro

Instructions:

  1. Sprinkle salmon with lemon pepper and bake at 375 for about 12 minutes

  2. Bring chicken broth to a boil; add rice or quinoa and cook according to package instructions

  3. Make salsa with chopped up avocado, jalapeno, tomato, corn and cilantro

  4. Mix sugar, mustard, soy and vinegar in saucepan and bring to boil and remove from heat

  5. Brush over salmon and broil for about 1-2 minutes

  6. Plate rice/quinoa and salmon; brush more sauce over salmon and top with salsa
