Ginger Chicken Meatball Soup

Ingredients:

1 finely chopped clove of garlic

1lb ground chicken

1T soy sauce

1/2 tsp grated ginger

4 scallions thinly sliced on the bias

4 cups chicken broth

olive oil

1 small bunch broccolini

1 tsp crushed red pepper flakes

Instructions:

  1. Mix garlic, chicken, soy sauce, ginger, scallions 

  2. Form 1 inch meatballs and cook with oil in large skillet or brown in the oven; transfer to plate when done

  3. In the same pan, combine broccolini and red pepper flakes; season with salt and pepper

  4. Cook until broccolini is tender and bright green – about 5 minutes

  5. Add meatballs and broth.

  6. Bring to boil and simmer for 5-8 minutes
