Asian Pork & Rice

Ingredients:

1 cup tomato juice

2 tablespoons soy sauce

2 tablespoons hoisin sauce

crushed red pepper flakes

shredded cooked pork or chicken

onion

garlic

red bell pepper

broccoli

green onions

sesame seeds, toasted

Instructions:

  1. Saute onion, garlic and red pepper flakes in a little olive oil and butter.

  2. Add tomato juice, soy sauce, broccoli and red bell pepper to soften.

  3. Add pork and hoisin and simmer until vegetable are just tender. Add more tomato juice or veggie stock as needed.

  4. Top with green onions and sesame seeds and serve with rice.
